Oven Baked Chicken Drumsticks

I am not a fan of chicken on the bone at all but I decided I need to try new things. I googled different ways to eat chicken on the bone; grilled, bbq-ed, baked, fried. I decided to try to bread them the way I make cutlets but with flour instead of breadcrumbs and maybe no egg. I think next time I will use breadcrumbs but regardless these came out so juicy, and flavorful but not quite the crunch I anticipated.

What You Need
8 Chicken Drumsticks
1 cup Flour(Mixed with the following spices)
2 tsp Pepper
2 tsp Salt
2 tsp Paprika
1 tsp Garlic Salt
1 tsp Onion Powder
1/4 cup of butter

I lined the bottom of my pyrex dish with foil to make for easier clean up. Add the butter to the pan and place in the oven to melt while you drench the chicken in the flour and spices.  Place the chicken in the pan skin side up and put in a 400 degree oven for 10 minutes. Turn chicken over and return to the oven for another 10 minutes. That's it, it's so fast and so simple.

Roasted Garlic Baked Chicken

Okay so this was sort of a concoction done right. We have juicy sauteed chicken breast with roasted vegetables blended in a creamy garlic and mushroom sauce baked with a crispy cheese coating. Delish!

What You Need
2 Boneless Skinless Chicken Breast
Can of Roasted Garlic Cream of Mushroom Soup
Can of Cream of Chicken Soup
5 Carrots (cut into 1-2 inch pieces)
5 Gloves of Garlic(whole peeled)
Handful of Mushrooms(chopped into bite size or sliced)
Half of an Onion(sliced)
Olive Oil
Salt
Pepper
Garlic Powder
2/3 cup shredded Mozzarella
1/2 cup seasoned Bread Crumbs


Split your chicken so you have four pieces. Season both sides with salt, pepper and garlic powder. Then saute the chicken for a few minutes on each side until they are browned and juices run clear.

While the chicken is sauteing, drizzle your chopped onion, carrots, mushrooms and garlic cloves with a little olive oil, salt and pepper, and garlic powder and toss. I season everything, ha. Place in a pyrex and roast in the oven on 400 degrees for 15 minutes.

Once the chicken is done and the veggies are mostly cooked, mix the two cans of soup in with the vegetables. Add the chicken and turn to coat in the sauce. Lightly sprinkle the top of the chicken pieces with shredded mozzarella and then with seasoned breadcrumbs. A little goes a long way. Place back in the oven for another 15 to 20 minutes, keep an eye on it, once the cheese is melted, the sauce is bubbling and the top starts to crust it's done. Enjoy!


It serves four. I made rice as a side dish but it would be great with mashed potatoes or pasta.

Buffalo Chicken with Mashed Avocado

I was craving avocado and Mike wanted Buffalo chicken, so I had this crazy idea to have them together. The result was an amazingly spicy/cool and creamy orgasm in your mouth.

Normally for Guacamole I will also add in diced plum tomatoes and red onion but I didn't want any crunch with the melt in your mouth chicken.

Guacamole
1 Avocado
1 Lime
Goya Adobo
Pepper
Salt
Garlic Powder

Slice the avocado in half, take out the pit and spoon out the meat. Dice the avocado and then mash using a potato masher.. Sprinkle with spices and the juice of the lime. More or less depending on your taste. I actually use a whole lime per avocado because I'm a weirdo like that and it's delicious. Set aside.

Boneless Buffalo Chicken
2 Boneless Skinless Breasts
Franks Red Hot
Olive Oil
Paprika
Salt
Pepper



Split the chicken breasts so you have four pieces. Tenderize them with a mallet and sprinkle each side with salt, pepper and paprika. Why the paprika, I don't know, but I didn't use it one time and it wasn't the same. Trust me. Drizzle a small amount of oil olive into a skillet over medium heat. Put the chicken pieces in the skillet and pour over a half cup of hot sauce. Put a lid on it. The lid makes a huge difference between dry chicken and moist chicken that falls apart. Cook for about 5 minutes per side. It's going to get watery from all the juice from the chicken, so if you like a thicker sauce take off the lid after cooking and allow to simmer for a few more minutes.
